How operators are using Global Nutrition Value to make allergen labelling, FSAI audits, recall response, and FSMA 204 record-keeping a routine part of the day.

Pilot operators in active rollout - April 2026. Full named case studies are being prepared with permission from each operator. The summaries below describe live deployments and pilot outcomes; named versions and direct testimonials will be published as each operator clears the case study for external use.

1. Multi-site institutional caterer - Ireland (active enterprise pilot)

Operation: Multi-site contract catering across hospital and education estates in the Republic of Ireland, serving more than 60,000 covers per week.

Brief: Replace a fragmented stack of recipe spreadsheets, supplier PDFs, and paper allergen sheets with a single FSAI-aligned operational platform.

Result so far:

  • Allergen-label generation time per menu cycle reduced from roughly 3 working days to under 60 seconds per dish.
  • Supplier specification ingestion automated; supplier reformulation now flows to affected recipes automatically rather than via email.
  • FSAI audit pack generation reduced from manual reconstruction to a one-click export.
  • First wave of sites live within 8 working days from contract sign.

2. UK contract caterer - PPDS labelling at scale (pilot)

Operation: Workplace and education catering operator running grab-and-go offers across multiple sites in the UK, all subject to Natasha's Law.

Brief: Bring PPDS labelling under one auditable workflow, with allergens emphasised correctly and a defensible audit record per label.

Result so far:

  • End-to-end PPDS label time per dish reduced to under 60 seconds, from a typical 5 to 8 minutes of manual look-up and printing.
  • Substitution events now logged in real time, with allergen recalculation and four-eyes approval before non-compliant labels can print.
  • Operational pattern: any inspector question about "what was on the label at 11:42 last Tuesday" is answered from the audit trail in seconds.

3. Hotel and hospitality group - cross-jurisdictional rollout (in progress)

Operation: Hospitality group with operations spanning Ireland, the UK, and continental Europe.

Brief: Single operational platform that satisfies FSAI, Natasha's Law / PPDS, EU 1169, and HACCP from one record - without running parallel local systems.

Result so far:

  • One recipe build, multi-jurisdiction labels - eliminates the duplication between sites in different regimes.
  • Cross-border supplier evidence flows to every affected site automatically.
  • Group-wide HACCP plan reviewed and digitised inside the platform, replacing per-site binders.

4. US foodservice operator - FSMA 204 readiness (early adopter)

Operation: US-based foodservice operator handling foods on the FDA Food Traceability List.

Brief: Demonstrate the 24-hour sortable electronic record requirement under FSMA 204 and replace paper receiving records with structured KDE / CTE capture.

Result so far:

  • Receiving CTE capture moved to dock-door tablet workflow with offline-first sync.
  • FDA-format sortable record exportable on demand for any food, lot, date range, or location.
  • Recall pulse: from contaminated lot code to all downstream affected products and locations in under 60 seconds.

What case studies will look like once published

Each named case study will follow a consistent format: operator profile, the operational problem in their words, the chosen GNV deployment, measured outcomes, and a direct quote from the operator. Numbers will be specific - not "improved compliance" but "allergen-label time reduced from 3 days to 60 seconds per dish across 14 sites."
